High Winds & Burgundy Pants

Last Friday was shaping up to be the perfect day to visit the playground...the sun was out, the weather was above 50 degrees, all that good stuff. Unfortunately, it didn't last very long because once we finally arrived the sun was no more and the wind had taken over!!

Picture me trying to strike a pose all while fighting the wind, being blinded by hair constantly blowing in my face and chasing after a highly active 1yr old who refuses to stand still. It was hilarious! I have no doubts that the people at the playground got their laugh of the day. Nevertheless, we had a fun family outing and I even managed to score a handful of great pics...SUCCESS!!

Manicure Monday - Bare Bones

Happy Monday!! Yep, I finally captured a's been forever right?! I've been on a nude kick lately and have been wearing this color for the past two weeks. Guess you can say it's a new fav ;-)

White Bean Chicken Chili

Raise your hand if you're over winter...I know I am! This weather is seriously bi-polar. Just yesterday I was riding around with my sunroof open and then today I woke up to snow...too much. Anyway, I figured this recipe (from Sticky.Gooey.Creamy.Chewy) would be perfect for a day like this! I have to admit that I'm not a huge chili fan but this right here is AMAZING. The hubby & I ate it for 3, maybe 4 days straight and we don't normally do leftovers, lol.


1 rotisserie chicken
2 tbsp olive oil
1 medium onion, diced
4 garlic cloves, minced
2 cans chopped green chilis
2 chipotle chilis in adobo sauce, pureed
1 tbsp cumin
1 tbsp oregano
1/2 tsp cayenne pepper
6 cups chicken broth
3 can great northern beans, drained & rinsed
1/4 cup whole milk, warmed
2 tbsp cornmeal
Salt & pepper to taste
Sour cream (or greek yogurt) & shredded monterey jack cheese 


*Shred rotisserie meat into small pieces and set aside
*Heat olive oil over medium in a large stock pot
*Add onion and sauté until soft (about 5 minutes)
*Stir in garlic, green chilies, chipotles, cumin, oregano & cayenne add cook for a few minutes
*Add chicken broth, chicken and beans then bring to a simmer
*In a small bowl, whisk together milk & cornmeal then gently stir it into the pot
*Cover and let simmer for 30 minutes (or until thickened)
*Season to taste & serve with toppings

CAUTION: This chili has a serious bite so if you're not a fan of spicy, please adjust the amount to chilies you add. Oh and of course you can't serve this bowl of awesomeness without a piece cornbread. Here's a quick recipe I tried from Dashing Dish that turned out perfect! If you decide to try this out, let me know what you think ;-)

Long Time No See!

Well hello there...long time no see huh? I'm a bit embarrassed that I haven't posted a single thing in almost 4 months. I mean really, who does that?!? Apparently me. I can't even come up with a decent excuse for why I've been away so long. It just happened. Life is good ;-) Seems like I have so much to catch you up on but don't really know where to start. If you're a Youtube subscriber, you won't need a recap but for the handful of you who don't watch my videos I guess I owe you something right? Here goes...

* I moved back home to Indy just in time to spend the holidays with my family which was great!

* Chad Jr. celebrated his 1st Christmas. He had a blast opening gifts (somewhat) & playing with all his new toys. 

* NYE was spent with friends at a house party. Quite the opposite of last year when I was 40 weeks pregnant, swollen &

* I threw an epic, last minute 1st birthday party for my baby boy and it turned out perfect! I was super stressed but it all came together in the end. Lesson learned - waiting until the last minute is not a good look...don't ever do that again.

* Btw, I made these awesome Sesame Street cupcakes - super impressed with my skills! 

* After many years of being a Beachbody junkie, I finally completed my first program (T25) and got amazing results. 8lbs down and 12 inches gone all during the holiday season - I'll take it! Check out this review video to learn more about my experience. 

* Last month I started a new program, P90X3 and so far so good ;-) 

* Oh I also decided to take the plunge and become a Beachbody Coach. It's pretty exciting but a little scary at the same time. Trying to break out of my comfort zone...oy vey 

Alright peeps, I think that's it for now. Just a brief summary of what's been going on in my life these days. I'm getting back into the swing of things and will promise try very hard not to be gone this long again.
