Happy Friday, Kumquats

Yes, I just called you a Kumquat. No, it's not a derogatory term. I just learned that last week, btw. For the past couple months, my husband has been annoyingly calling me a Kumquat as a term of endearment. When he first started, I told him that it was a horrible, awful word he should never call his wife. I mean doesn't it just sound raunchy?? He laughed and never stopped using it.


 Fast forward to our Trader Joe's excursion last week. As we were walking down the produce aisle, he just so happened to spot a package of what...Kumquats. Seriously?! The look on his face was priceless. All I could hear was "haha, told you so". All I could do was laugh. Who knew it really wasn't a bad word!

Anyway, that's my funny story for the day. Have a fantastic Friday and an awesome weekend!

I'm not a big "prints" person but I have to admit that I loooove this top. It's truly one of my favorites!  The combination of the zipper back and tie around the waist pretty much sets it off (in my opinion). Although I usually stick to pairing it with neutrals, the possibilities are endless. Maybe next time I'll jazz it up a bit with more color.

Manicure Mondays - Savage Glitz

Well hello there...Happy Monday!! I think I'm still recuperating from the weekend - it was a busy one. Anyway, for this week's No-Chip Manicure I decided to try out another one of my Sally Hansen Gem Crush nail colors.

Last Friday, I attended a black & white themed party so I wanted to make sure I chose the right color to make my nails pop. This sparkly grayish/black polish turned out to be perfect for not only for toning down my bright blue base but adding a bit of an accent as well.

Yes, this is what I ate today at work (in addition to the slice of Louisiana crunch cake that's not pictured)! Where are they doing that?? They're not. 

Apparently every month, the company gets together for a cookout/pitch-in thingy and today happened to be my first experience. Now that I know what I'm dealing with, I'll be better equipped with some self control next time. Being within reach of all this temptation is probably the worst part of working in an office! It's much easier when you can control what's around. I'm going on record saying that I refuse to let this place steer me off track from my goals! You remember 30 Before 30 right? Yeah, that's still happening. I know I haven't updated you lately. Sue me. Maybe we'll talk about it next week...

Anyway, I'm off to hopefully redeem myself at the gym! Have a great evening ;-)

I have to say that I wasn't sure how these were going to work out but I was pleasantly surprised. The total application was super easy and only took about 10 minutes to complete. Perhaps the biggest plus is that they're still going strong on day five...not a chip in sight! I will definitely be trying out more of these designs in the future.

Friday Night Celebration

This week has been full of great things so we decided to go out and celebrate! 

What great things, you ask? Well for starters, I got a job!!! Woo-hoo ;-) It has been a long 7 months of playing the housewife role but it all comes to an end on Monday. I'm not sure how I'll be handling the alarm clock going off at the crack of dawn but for now it seems kind of exciting. Secondly, babe received his diploma in the mail...yay!! Last month he completed his associates program and has been anxiously awaiting the day that he'd be able to put his degree on display. I'm so proud of him!

Manicure Mondays - Mellow Yellow

Happy Monday!! How was your weekend? Today's No-Chip Manicure is pretty much a fail in my eyes. There's just something about this color that I can't get with. It looked much better in the bottle.

I was hoping for a nice mustard shade of yellow but got 24k gold instead. No a fan! Guess I can't be too disappointed since I bought this polish on clearance for $1. What do you think...yay or nay??

Baked Zucchini Sticks & Sweet Onion Dip

Thanks to Pinterest, I found another wonderful recipe for a healthy snack. Next time you have the urge to add potato chips to your shopping cart...grab some zucchini instead!


Ingredients

2-3 Zucchini
2 large eggs or egg substitute equivalent
1 cup Bread Crumbs (regular or italian)
1/2 cup Parmesan Cheese
1 tbsp Salt
1 tbsp Pizza Seasoning 
Olive Oil Spray

Sweet Onion Dip
2 tbsp Honey
2 tbsp Cider Vinegar
1 tbsp Mustard
1 tbsp Butter
1 cup Mayo (I used plain greek yogurt instead)
1 Onion, peeled and sliced

Directions


* Cut each zucchini into 9 sticks lengthwise, then into 3" pieces
* Place the sticks in a colander and sprinkle with the salt
* Let zucchini drain for an hour
* Rinse & pat dry


* Add butter and onions to a skillet over medium heat
* Cook until caramelized - about 10-15 minutes
* Remove from heat then add vinegar
* Combine the onion/vinegar mix with honey & mustard in a food processor
* Blend until smooth
* Remove from processor then combine with mayo
* Cover and refrigerate until time to serve


* Preheat oven to 425
* Line a baking sheet with parchment paper, spray with olive oil
* Combine bread crumbs, pizza seasoning & cheese in a bowl
* Place eggs in a separate bowl
* Dip zucchini sticks in eggs, coat with bread crumb mixture then place on baking sheet


* Bake for 12-14 minutes on each side or until golden brown/crisp
* Serve with sweet onion dip immediately


Now that's what I call smart snacking! Enjoy ;-)

It really does smells like mango. Last week, I tried the bubblegum and let me tell you that the scent was still on my nails by day 5. I'm super impressed!
