Jalapeño Popper Grilled Cheese Sandwich

I honestly can't even put into words how in love I am with this here sandwich. It is absolutely amazing...heaven on sourdough breadAs I was browsing for ways to make my Bacon Wrapped Jalapeño Poppers, I found this recipe on Closet Cooking and instantly knew that I had to try it.


Ingredients

2 tablespoons cream cheese, room temp
1 tablespoon of butter or margarine, room temp
2 slices of sourdough bread (or your bread of choice)
1 - 2 jalapeño peppers, cut in half lengthwise and seeded
1/2 cup shredded cheddar & jack cheese (I used fat free cheddar)


Directions

* Grill or broil the peppers, face down for about 10-12 minutes or until the skin is blackened
* Place the peppers in a sealed zip lock bag and let them cool 15 minutes
* Remove peppers from the bag and peel off the skin (should come off very easily)
* Lightly toast your bread 
* Butter the outside and cream cheese the inside of each slice
* Layer your sandwich as follows: toast - cheddar - jalapeños - cheddar - toast
* Heat a non-stick pan over medium heat
* Add sandwich & cook 3-4 minutes per side or until cheese is melted & toast is golden brown

Manicure Mondays - Bubble Gum

Happy Monday!! 

Have you ever heard of scented nail polish? If so, you've got one on me because when I came across this line by Revlon, I was shocked. Not only had I never heard of anything like this before, I was also confident that the chances of it actually working would be slim to none. Despite my skepticism, I went ahead and bought 4 colors (buy 1, get 1) and decided to try the first one out on today's No-Chip Manicure.

First up, Bubble Gum. Can't go wrong with pink right?! It is probably one of my favorite go to nail colors because it always looks pretty, no matter what shade you choose.

So the big question at hand...does it really smell like bubble gum?? OMG YES, it absolutely does!! I still can't believe it. After applying two coats each of color and top coat, I can still smell the polish. As a matter of fact, I can't keep myself from smelling my fingers every 5 seconds while typing this post. See how easily I'm amazed, lol. Now how long this smell will last is another story. I'm feeling like it might be gone by tomorrow but I guess I'll have to wait and see.

Patriotic Sunday

As you can see, I was feeling very patriotic while getting ready for church this morning. There's just something about the combination of red, white & blue that looks so fresh and crisp!  Although it wasn't quite warm enough to break out the peep toes I would have preferred, my neutral wedges turned out to be a perfect fit. I'm proud to say that with this outfit, my color quota for the week has officially been met ;-)

Pretty sure the pashmina is my favorite piece in this ensemble for a number of reasons. For starters, babe got it for me in another country so I don't have to worry about running into someone wearing the same thing. Secondly, the fact that it has a variety of colors makes it oh so versatile. Lastly, it's large size gives me plenty of styling options! If you ask me, he did a fantastic job ;-)

Manicure Mondays - Bejeweled

Happy Monday!! Today's No-Chip Manicure is featuring a shade of my favorite color...purple. Can't go wrong with that right?! A couple months ago, I came across the new Sally Hansen Gem Crush line and fell in love. I bought three different colors and decided it was time to finally give it a try.

I love the subtlety of an accent on the tip but I think a full nail would have been the better choice for displaying this beautiful color. I'll definitely be back to buy more from the Gem Crush line.

24Hrs of Fun

Hubby & I went to Nashville for a housewarming party yesterday and had a blast! It's always good to hang out with great people. We had every intention of coming back last night but decided to stay over and have a slumber party instead. Today we got up and had a little fun in the city before getting on the road. Here are some highlights...

Prosciutto Wrapped Cherry Stuffed Chicken Breast

My Valentine's Day meal was a success!! Thanks to Chef John from YouTube, I was able to wow the hubby with my cooking skills ;-) Although this recipe was a bit labor intensive, seeing the look on his face definitely made it worth the time spent.


Ingredients:

1 Egg 
2 tsp Olive Oil
4 slices of Prosciutto
2 Garlic Cloves, minced
2 tbsp grated Parmesan Cheese
1/3 cup Dried Cherries, chopped
2 large Boneless Skinless Chicken Breast
1/4 cup Breadcrumbs (i used Italian style)
Salt, Pepper & Cayenne 

Optional Sauce:

Salt, Pepper
1 tbsp Butter
3/4 cup Chicken Broth
1 tbsp Balsamic Vinegar

Manicure Mondays - Valentine Inspiration

Alright so this week's No-Chip Manicure is going to be a little different. I did my nails on Saturday with the intention of getting this post out of the way so that I could use today to focus on more important things, like the surprise dinner I plan on making for hubby tomorrow.

Well, my nails turned out to be a hot mess so instead of trying to redo them I decided to post Plan B and show off some of my favorite Valentine's Day manicures.








I have to admit that it was hard trying to narrow down my selections because there are too many funky designs out there that would be perfect. If I had to choose, I'd say that look #1 is by far my favorite!

Today I felt like showing off a bit of color. I'm normally a black & grey type of gal but every now and then I spruce things up. Staying in the neutral family, I thought the mustard and cream combo was a nice touch with the brown. Of course the red bag was an added bonus ;-)

Bacon Wrapped Jalapeño Poppers

When I came across this recipe on YouTube, I had to make them! The fact that they weren't the traditional jalapeño poppers, really caught my eye. So I decided to make them for a Super Bowl Party on Sunday and they were a hit!! 


Ingredients

20 Jalapeños, fresh
8 oz block of Cream Cheese, room temperature
3/4 cup Cheddar Cheese
1.5lbs Hickory Smoked Bacon
Cayenne pepper, Garlic Powder, Onion Powder (optional)


Directions

* Preheat the oven to 375
* Mix together the cream cheese and cheddar in a bowl, season to your liking
* Cut the jalapeños in half lengthwise and remove the seeds/membrane
* Cut bacon strips in half either way
* Stuff each half with the cream cheese mixture, then wrap with bacon


* Place on wire rack over a baking sheet (without the rack they'll cook sitting in bacon grease)
* Bake for 20-25 minutes or until the bacon looks brown
* Cool for 5 minutes, then dig in ;-)

Manicure Mondays - Fuchsia Dot

Happy Monday!! Hope your weekend was wonderful. Mine was laid back & relaxing.

As I was winding down last night browsing around Pinterest, I came across the cutest nail look featuring dots. It stuck out because I've never done a look like that before. So, I decided to give it a go and try it out for this week's No-Chip Manicure. Keep in mind that I am no nail artist but figured it would be good to step outside box and experiment. I even added a little design to my toes - guess I was feeling festive

Superbowl Sunday

It's that time of the year again...Superbowl!! No, I'm so not a football fan but I am very proud to see my hometown do it up big for such a special occasion.


Yep, that's my city and I'm not even there to experience it - *sad face*! I'm currently stuck in no man's land but that's okay. At least I made these babies to keep me company take along to the SB party we're attending.
