Baked Zucchini Sticks & Sweet Onion Dip

Thanks to Pinterest, I found another wonderful recipe for a healthy snack. Next time you have the urge to add potato chips to your shopping cart…grab some zucchini instead!

Ingredients

2-3 Zucchini

2 large eggs or egg substitute equivalent

1 cup Bread Crumbs (regular or italian)

1/2 cup Parmesan Cheese

1 tbsp Salt

1 tbsp Pizza Seasoning 

Olive Oil Spray

Sweet Onion Dip

2 tbsp Honey

2 tbsp Cider Vinegar

1 tbsp Mustard

1 tbsp Butter

1 cup Mayo (I used plain greek yogurt instead)

1 Onion, peeled and sliced

Directions

* Cut each zucchini into 9 sticks lengthwise, then into 3″ pieces

* Place the sticks in a colander and sprinkle with the salt

* Let zucchini drain for an hour

* Rinse & pat dry

* Add butter and onions to a skillet over medium heat

* Cook until caramelized – about 10-15 minutes

* Remove from heat then add vinegar

* Combine the onion/vinegar mix with honey & mustard in a food processor

* Blend until smooth

* Remove from processor then combine with mayo

* Cover and refrigerate until time to serve

* Preheat oven to 425

* Line a baking sheet with parchment paper, spray with olive oil

* Combine bread crumbs, pizza seasoning & cheese in a bowl

* Place eggs in a separate bowl

* Dip zucchini sticks in eggs, coat with bread crumb mixture then place on baking sheet

* Bake for 12-14 minutes on each side or until golden brown/crisp

* Serve with sweet onion dip immediately

Now that’s what I call smart snacking! Enjoy 😉
