Prosciutto Wrapped Cherry Stuffed Chicken Breast

My Valentine's Day meal was a success!! Thanks to Chef John from YouTube, I was able to wow the hubby with my cooking skills ;-) Although this recipe was a bit labor intensive, seeing the look on his face definitely made it worth the time spent.


1 Egg 
2 tsp Olive Oil
4 slices of Prosciutto
2 Garlic Cloves, minced
2 tbsp grated Parmesan Cheese
1/3 cup Dried Cherries, chopped
2 large Boneless Skinless Chicken Breast
1/4 cup Breadcrumbs (i used Italian style)
Salt, Pepper & Cayenne 

Optional Sauce:

Salt, Pepper
1 tbsp Butter
3/4 cup Chicken Broth
1 tbsp Balsamic Vinegar

*Full directions are included in the video below. I could try and write out all the steps but I'm pretty sure you'd understand it much better if I just showed you ;-)
