Easy Skillet Chicken with Vegetables

Last night I took a quick inventory of my refrigerator and decided to throw together what I could. The plan was originally to bake the chicken but I was so hungry that I couldn’t wait that long. This turned out to be the perfect substitution and tasted just as great! The whole recipe took me about 30 minutes, so it’s an easy dish to make when you’re short on time.

Ingredients

1lb Boneless Skinless Chicken Thighs, cut in halves (feel free to use chicken breast instead)

1 Onion, chopped

1 Green Pepper, chopped

10-15 Grape Tomatoes, sliced in half (roma or cherry would also work)

1 Cup Sliced Mushrooms

2 Tbsp Red Wine Vinegar

2 Tbsp Olive Oil

Seasoning of your choice (I used onion powder, garlic powder, creole seasoning & pepper)

Directions

*Prep your chicken – cut and season generously

*Heat olive oil in a large skillet over medium-high heat

*Cook the chicken until brown (about 5 minutes on each side)

*Once finished, remove the chicken from the skillet and set aside

*Add the chopped onions, peppers & mushrooms to the skillet (a bit more olive oil if needed)

*Add red wine vinegar

*Saute veggies for 10 minutes or until soft (at this point I added a bit more of my seasonings)

*Return chicken to the skillet

*Add tomatoes

*Cover and simmer on medium heat for 10 more minutes

There you have it! Serve with your favorite side dish and enjoy 😉
